Semi-Homemade Meatball Soup with IKEA Meatballs!

Who knew it was National Soup Month?  Not me, until earlier these week and after the fact that I was already planning on sharing this recipe!

Not sure about you guys but this month we're laying LOW.  Way low.  And although we'll probably be laying low even well after January I'll definitely be here sharing good stuff with you guys just like today.

This passed weekend we literally didn't do much except my son had a soccer scrimmage game Saturday and the rest of the weekend we watched movies, organized some more, worked on a couple of small projects, did some laundry and lounged, of course not all in that order.  Its what a typical day or weekend in our household looks like when we have no official plans.  I think after the holidays we all appreciate these types of weekends.

What can I say we're what you call a #Homebody family!

So on Sunday I decided to make a warm and so delicious meatball soup.  Like many of you can relate, when in part of laying low, also means eating in more and out less.  I noticed that Natalie from is currently doing the same with her family.  She's calling it Operation Eat Out Less.  So goes to show how a lot of us are thinking alike these days.

Not only are we saving money but eating better and heartedly, in my opinion.

This is a very popular soup in all of South American culture and all over the world basically, simply because its the ultimate comfort soup.  We grew up with mom's homemade meatball soup.  I never really grasped the niche of making the meatballs from scratch, it just too time consuming for me but not taken for granted.  Fondest memories come from mom's cooking doesn't it?!  Although this soup has nothing on mom's homemade soup, I still think its a winner and very close to it.

Because I prefer for prep and cook time to take less time and spend more time savoring it.  The fact that I used Ikea's Meatballs, which cut time in half, for me was already a winner for Sunday dinner!

The essence of the spice in this soup comes from an exotic trio of ground cumin, cilantro and oregano.  The aroma is just intoxicating! You'll love it!

 I went ahead and added a little bit of Sriracha hot sauce with some lime for my taste but believe me it doesn't need it, its delicious just the way it is.

Here's the recipe.

  • 3 stalks of celery cut into chunks (you can go big or small, you can't go wrong)
  • 6 or 8 carrots cut into chunks
  • 6 cups of Chicken Stock (or Vegetable stock if you prefer)
  • 1/2 cup onion finely chopped
  • 1/2 tsp ground Cumin
  • 1 tsp ground Oregano
  • 1 tbsp ground Cilantro
  • 12 oz can of diced tomatoes
  • Salt 
  • Black Pepper
  • Ikea's KĂ–TTBULLAR Meatballs (about 1/2 or 3/4 of the frozen bag, up to you)
  1. Combine all ingredients except meatballs for about 10 minutes bring to a boil.
  2. Add Meatballs and continue to boil for 20-30 minutes until cooked to your preference in taste, add more salt and pepper to taste.

Its that easy.

    1. Cristina it can be difficult sometimes especially when nowadays its so easy to just go out and buy a family meal but ocassionally we love to keep it minimal and have hearty homemade meals especially easy ones like this one, give it a try for sure! :)
