Reeses Peanut Butter Cup Holiday Cookies


Hey friends, hope you all had a great weekend, I'm here to make your Monday just a little sweeter.  In case you still don't know what to gift friends, family or your sweet neighbors, baked treats are seriously the best gift!

I love receiving them and since having been living in our home, we've been exchanging baked treats with our neighbors for Christmas every year.





I was lucky enough to have come across an easy recipe like this one and a few others I'll be trying, but this one is by far one of my favorites.  Cause HELLO, who doesn't love a good Reese's peanut butter candy anything period?!!


Well if you don't, you might actually love these cookies regardless.



Easy to make and bake and perfect for that peanut butter and chocolate lover, like myself.  This is not at all a sponsored post by the way, but some of you asked me to share this recipe with you, so I'm doing so today.  

Its actually an original recipe inspired by The Magnolia Bakery with a few adjustments, you'll see below.


Ingredients
  • 1 1⁄4 cups all-purpose flour
  • 3⁄4 teaspoon baking soda
  • 1⁄2 teaspoon baking powder
  • 1⁄4 teaspoon salt
  • 1⁄2 cup unsalted butter, room temperature
  • 1 cup creamy peanut butter 
  • 3⁄4 cup sugar
  • 1⁄2 cup firmly packed light brown sugar
  • 1 large egg
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1⁄2 cup peanut butter morsels (peanut butter chips)
  • 1⁄2 cup semisweet chocolate, chopped very coarsely
  • 1⁄4 cup chopped peanuts
  • 1/2 cup of Reese's Peanut Butter miniature cups chopped (my own addition instead of the PB and chocolate chips)


Directions

Preheat oven to 350 degrees.

In a medium bowl, combine the flour, baking soda, baking powder, and salt.

In a large bowl, beat the butter and the peanut butter together until fluffy.

Add the sugars and beat until smooth. Add the egg, milk and vanilla extract and mix well.

Add the flour mixture and beat thoroughly.
Stir in the peanut butter chips, chocolate, and peanuts chopped Reese's peanut butter cups.

Refrigerate the dough for 10-20 minutes.

Scoop the dough by using an mini ice cream scooper so they're perfectly round.

Place onto un-greased cookie sheets, at least two inches apart. 

Bake for 10 to 12 minutes. Do not over bake; cookies may appear to be underdone but they will continue to bake after removed from the oven.

Cool the cookies on the sheets for 1 minute, then remove to a rack to cool completely.


Pretty easy and delicious, I honestly couldn't help but eat a few of these last week and I had to box them before I could eat all of them.
