Mixed Berry Tart | Patriotic Recipe




Firing up the grill is key when it comes to Summer eats.  Especially on 4th of July.  We usually invite friends and family to celebrate Independence Day in our backyards with refreshing drinks, entrées hot off the grill, tasty sides, and festive red, white, and blue desserts.




Fourth of July is third on my list of favorite holidays.  I love that it means family, fun, celebrating and good food.

Today I'm sharing with you guys a light and refreshing red and blue tasty Mixed Berry Tart, the perfect dessert for a hot summer day and easy enough to serve if you're hosting or to bring along to your friends house.





To be perfectly honest, anything lemon and berry is by far my favorite!  Besides anything pumpkin of course.



Mixed Berry Tart | Recipe

Shortbread Crust



  • 3/4 cup unsalted butter, at room temperature
  • 1/3 cup confectioners' sugar
  • 1 1/2 cups all-purpose flower
  • 1/4 tsp. salt
Blend crust ingredients until a soft dough forms.  Pat into a 9 or 10 inch tart pan or any pie pan you have available works well too.  Spray with non-stick cooking spray or butter is fine too.  Prick crust with fork.  Bake at 350F for 15-20 minutes.  Let crust cool, but keep oven heated for the next step.

Lemon Filling

  • 5 oz cream cheese, at room temperature 
  • 1/2 cup white sugar
  • 1/2 cup fresh lemon juice (from 2 large lemons)
  • 1 tbsp. lemon zest
  • 2 large eggs
  • 2 cups mixed berries for garnish
Blend cream cheese in mixer or food processor until smooth, for me the food processor worked best.  Add sugar, lemon juice, lemon zest, and eggs, 1 at a time, until blended and smooth.  Pour into tart shell and bake at 350F for 25 minutes.  Remove from oven and cool in the fridge for 1 hour or until ready to serve.   Top with your fresh berries and garnish with mint if you wish.  Remember to refrigerate any leftovers.

I love this dish because not only is it refreshing and guilt-free, but its festive and easy enough to make.  Not to mention budget friendly.  You probably already have all the ingredients and just go out and buy your fresh berries at your local farmers market if needed.






I love sharing recipes with you that my I know my family loves and that I know you will love too.  Nowadays its about making homemade recipes and nothing says love like a homemade dish.  But I know that we are all so much busier these days too, so an easy not so time consuming entree or dessert or appetizer is a must if making it from scratch.

I'm not bashing on store bought ready to-go foods, I'll be the first one to admit that sometimes its just easier but I love baking and sometimes cooking too :)  so bringing that to the table feels good because its just better for us.
